Spring | Roasted Asparagus

Serves 6 generously alongside dinner


~ Two large bunches of thick asparagus
~ 4 T olive oil
~ 1 T balsamic vinegar
~ Salt and freshly ground black pepper
~ Grated parmesan cheese
~ Preheat oven to 500 degrees Fahrenheit.

Whisk balsamic vinegar and oil together in a small dish.
Rinse asparagus and group on cutting board with the ends of the stalks lined up.
Cut two inches off the bottom of each stalk, easily removing the tough woody portion.
Toss with olive oil/balsamic mixture directly on a baking sheet and then spread the stalks in a single layer.
Roast @ 500 degrees for 8-10 minutes.
Remove from oven.
Sprinkle generously with pepper and gently with salt.
Scatter sparsely with parmesan cheese and return to the oven for 2-3 minutes.
Remove and serve immediately alongside leg of lamb or just about anything!
